Yeah you read it right, 24 hour pizza! Hah!
Well, this wouldn't exist if it didn't taste good would it? I mean who would make a 24 hour pizza pffft.
I found this recipe on king arthur flours website, and well it sort of just never stopped since then! This pizza is so good, I can't even describe it to you! You know that proper air filled crust? Crispy, light, and cooks before your eyes in seconds! The dough is so beautiful and fragile it makes me CRY.
Because I like you guys (hehe) heres the recipe!
Adapted from king arthur flour
250g organic white flour (I use waitrose and its amazing, it does make a different)
1/8 teaspoon active dry yeast
1/2 teaspoon sugar
1 1/4 teaspoon salt
185g lukewarm water
Its simple, just mix everything just until its combined, no need to over mix, cover the skin well with plastic wrap and place in a warm place for 24 hours.
After that, split the dough into 2, shape into balls by folding into each other twice, then cover and allow to rise for 1 hour (meanwhile heat your pizza stone, DONT SKIP THIS, Go buy a pizza stone Yala)
(To heat your pizza stone, just place it in the hottest setting in the oven 45 minutes before cooking the pizza)
Now, on a floured surface, take one piece of the dough and simply press your fingers in the centre WITHOUT touching the edges, we want them to STAY puffy. once you get the thinness you want, place on a flour wooden pizza tray and place the toppings on top, I usually go for a homemade tomato sauce:
1 can of chopped organic tomatoes
3 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon chili flakes
1/2 teaspoon salt
Simply cook the garlic in the oil then follow with the chili flakes, add the tomatoes and salt then allow to boil. Remove and process in a blender and allow to cool
I top the pizza with my favorite cheese which is either fresh mozzarella or kashkaval (So good) you don't need lots of toppings, the dough is more than enough!
Slide the pizza onto your pizza stone and cook until the crust has puffed and is just P E R F E C T
