Its Friday morning, and the Eid holiday is about to end, work commences this sunday and so does University.
You can tell I’m not really excited about that, cooking is much easier during holidays.
So this morning I made some Banana walnut pancakes, extremely quick and easy whip up, and so easy to go creative with the flavors and so.
-1 cup all purpose flour
-1 tablespoon baking powder
-1/2 teaspoon salt
-3 tablespoons sugar
-2 tablespoons butter
-1 cup milk
-1/3 cup walnuts, chopped coarsely
Begin by preheating a pan on medium heat.
Sift the flour, baking powder, and salt into a bowl. Add the sugar, give a stir and set aside.
In another bowl, melt the butter in the microwave for a few seconds until melted then add the milk slowly while stirring, add the egg and mix well to incorporate it all.
Now in another bowl, mash up the banana using a fork. Then dump the butter mixture into the flour mixture and mix well, then add the banana and mix again, and then add the walnuts and mix again. Your mixture is now ready!
Lightly oil the saucepan using a brush.
Now using an ice cream scoop begin drizzling the mixture onto the pan, cooking one pancake at a time. You’ll know when the bottom is done when you get alot of bubbles. Flip the pancakes using a spatula and cook on both sides until golden.
Top them with bananas, walnuts, and a drizzle of maple syrup.
