Lets face it. healthy tastes different.
But not always bad different.
I adore healthy eating (Although i love desserts) and i always TRY to eat healthily. This rice dish tastes really yummy and its made with brown rice. Oh yeah! :D
-Around 2-2 1/2 cups of brown rice
-2 chicken breasts (About 200-250 grams)
-1 tablespoon of olive oil
-1 chopped onion
-2 cloves of garlic
-3 1/2 tablespoons of pesto
-1/4 cup of grated parmesan cheese
-1 tablespoon of zaatar
-salt & pepper
-Your choice of veggies ( I used broccoli & mushroom)
-dried pepper flakes (If you like it spicy)
Ok, so first cook the rice and set it aside. Heat the olive oil in a medium-large wok and add the onion & garlic and cook for a while until softened. Add the chicken and sprinkle the zaatar and keep cooking. Then once the chicken is cooked add the rice, pesto, and parmesan. Stir it all so the flavors reach everywheeere. Add the veggies and cook for alittle while until veggies are cooked (I like them hard to the bite not mushy) Then simply season it all with salt, pepper, and Chili flakes.
