Saffron & cardamon cupcakes

You might of noticed that i have this thing with the two substances called Cardamon & Saffron. Well, i do, and i try to add them to everything i make! They taste beautiful and add exquisite flavor to anything. They are also hugely used here in the UAE. We put it in EVERYTHING and I LOVE it.

So instead of a chocolate cupcake or vanilla cupcake or anything. How about a HailCardamon & saffron cupcake. I always want to write Hail instead of Cardamon as it is the Arabic word for it, excuse me. :p

It is truly delicious, the cardamon adds such a immensely beautiful flavor and the saffron is just mouth watering. No, this is not an advertisement! But i truly love the flavor these substances add to the cupcakes.

Makes 36 cupcakes.

Ingredients:

2 2/3 cups all purpose flour

2 tsp baking powder

A sprinkle of salt

225 grams of softened butter

1 3/4 cup of sugar

4 eggs 

1 cup of milk

1 tsp vanilla essence

1 1/2 powdered cardamon

1/4  tsp of saffron

Cardamon buttercream:

simply add a tsp of cardamon to the buttercream and combine these luscious ingredients together and pipe on top of the cupcakes.

Preheat oven to 175 C.

First, sift the dry ingredients together in a bowl and set aside.

In an electric mixter mix the butter and sugar until fluffy, add the vanilla, then start adding the eggs one at a time, beating after each addition. Add the flour in two batches, so add 1/2 the flour mixture, then add the 1/2 the milk mixture, then the rest of the flour mixture, then the rest of the milk. Beat until incorporated then add the cardamon and saffron. Bake in the oven for 25-30 minutes. or until tooth pick comes out clean. Allow to cool THEN prepare the cardamon buttercream and pipe on top of these babies!
