Squeeze me easy.

Yep, Marshamallows! I seriously never ever thought about making marshmallows in my entire life. And i never even knew they can be home made! My first exposure to home made marshmallows was in the selfridges food marktet section in London. The way they elegantly sat in that plastic bag looked so mouthwatering and delicious! I knew i had to make my own batch one day. And today is the day.

These were actually made yesterday, just cut into pieces today morning ;) And they look, feel, and smell so cute!

This is the first time i deal with gelatin. And i must say, it is a very weird substance to deal with.

Ingredients:

-30 grams of gelatin powder 

-1/2 & another 1/2 cup of cold water

-1/2 cup of corn syrup (I use light)

-2 cups of sugar

-a sprinkle of salt

-2 egg whites

-1 1/2 tablespoons vanilla extract

-1/4 teaspoon red food coloring

-Some oil & confectioners sugar for the dish & more confectioners sugar for dusting.

Directions:

First, in a bowl combine the gelatin and 1/2 cup of cold water and let it sit until set.

Now on low heat, bring a pan and add the 1/2 cup of cold water, corn syrup, sugar, and salt and stir until the sugar is dissolved within the liquid.

Now increase the heat and bring it all to a boil, do not stir here, simply let it simmer for 10 minutes.

Now remove it from the heat and add it to the gelatin mixture and stir baby!

The gelatin should dissolve into the liquid.

with the help of a mixture, beat the liquid until it becomes white & fluffy (about ten minutes). When you star beating the liquid you truly wont believe that that brown substance will turn white, but it will ;)

Next beat the egg whites until stiff peaks form and dump it into the other mixture. Then add the coloring and vanilla extract and beat until combined.

Pour the pretty pink mixture into a PRE-OILED & DUSTED PAN. And dump a generous sift-full sprinkle of confectioners sugar on top.

Allow to rest for 4 hours or over night in room temperature. Then cut into cubes and dust sides with more confectioners sugar and enjoy with a warm and alluring cup of delish hot chocolate or tea. YUM.
